Colombia El Marchito coffee is grown by Justianiano Paya in the farm of the same name located in Tolima, Colombia. Justianiano belongs to the 2nd generation of coffee producers of Finca El Marchito. He is the founder of ASOCANAFI, an important cooperative of small-scale coffee producers in the region which is particularly aware in the field of sustainable production and environmental protection.
Finca El Marchito covers an area of 6 hectares (approx. 10 acres) at an altitude ranging between 1650 -2100 meters. There, Justianiano Paya selects and cultivates in a limited quantity (microlot), the variety of coffee intended for Colombia El Marchito, The selective manual harvest is followed by the anaerobic fermentation of the fruits, lasting 120 hours. Then, the fleshy part of the fruit is removed and the fruit is washed and dried in the shade of special sheds.
